Walnut and Syrup Loaf

INGREDIENTS

4ozs Granulated Sugar
6ozs Golden Syrup
1/3rd pint or just under (scant)
2ozs sultanas
8ozs Self Raising Flour
Pinch salt
2ozs chopped walnuts
1 egg beaten

INSTRUCTIONS

1/ Grease a 2lb loaf tin, or use a greaseproof tin liner. Heat sugar, syrup, milk and sultanas in a saucepan. Stir until sugar dissolves. Allow to cool.

2/ Mix flour and salt in a bowl. Add chopped walnuts. Add sugar mixture and egg. Beat together. Put in prepared tin and bake in the middle of the pre-heated oven for about one hour. 180º Celsius. 350º Fahrenheit or Gas Mark 4. It is cooked when a skewer inserted in the centre comes out clean.

3/ Remove from the tin and cool on a wire rack.

4/ The cake improves with keeping. It becomes nice and moist. Serve sliced, spread with butter.
