Super Easy Ricotta Cake

INGREDIENTS
(You'll need 2 large bowls and a 9X13 cake pan)
Bowl #1
Mix: 2 lbs Ricotta cheese
4 eggs
3/4 cup sugar
3 tsp. Vanilla
Set aside...
Bowl #2
Make a Yellow cake mix as directed on the box
(use a brand name like "Betty Crocker" or "Duncan
Hines" - generics don't
work as well)
INSTRUCTIONS
Mix together ingredients in Bowl #1. Set aside. In Bowl #2, make a yellow cake mix as directed on the box.
Grease 9X13 cake pan.
Pour cake mix in pan first, then spoon ricotta mix
evenly on top of cake mix.
Bake at 350 degrees for an hour (depending on oven,
it may require more time - just keep testing the
center with toothpick until baked through. If top is
getting dark brown, turn oven temp down until baked
through).
Allow cake to cool slightly, then sprinkle
cinnamon/sugar on top and drizzle
with caramel sauce. Serve warm with cool-whip.
