Macedonian Layered Potato Salad

INGREDIENTS

3-4 large white potatoes (boiled)

3-4 hard boiled eggs

16 ounces Feta Cheese* (crumbled or shredded)

Mayonnaise*

Black Olives (Optional)

Green Olives (Optional)

Green &/ or Red Peppers (Optional)

Carrots (Optional)

*To reduce fat and calories, substitute low- or fat-free feta cheese and/ or mayonnaise.

INSTRUCTIONS

For best results, boil the potatoes with skins on, let cool then peal.

On a round or oval plate, grate 1 or 2 of the larger potatoes to cover the bottom of the plate

Add the 2nd layer by grating 1 -2 of the hard boiled eggs over the potatoes.

Follow the potatoes and eggs with a layer of crumbled Feta (or grated Feta) Repeat layers 1 or 2 more time until potatoes, eggs and Feta are finished (or to desired size)

With your hands, lightly tap and shape the layers so that you can spread the mayonnaise evenly over the top (like frosting a cake). Decorate the covered potato salad with olives, peppers, and/ or carrots.
