Orange Pancakes

INGREDIENTS

2 1/4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups whole milk, 1/2 cup fresh orange juice, zest from 3 large oranges,
4 large eggs, separated,
3 tablespoons butter melted or oil
3 tablespoons sugar
your favorite syrup

INSTRUCTIONS

Mix first 3 ingredients together, then in another bowl whisk milk, orange juice, orange zest, butter/oil and egg yolks together.mix with dry ingredients to form a smooth batter. next whisk egg whites gradually adding the sugar till stiff peaks form. carefully fold whipped egg whites in to batter then cook as you would any other pancake top with your favorite syrup and butter and enjoy.....

I have a orange tree in my back yard so i try to use orange juice/zest when ever i can it adds a nice little twist and livens up some of my recipes.(the citrus aroma/flavor you get from these pancakes is heavenly)
