Pioneer Buttermilk Doughnuts

INGREDIENTS
2 eggs
1 cup granulated sugar
1/4 cup cooking oil
1 teaspoon vanilla
4 cups all purpose flour
4 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
1 cup buttermilk
Fat for frying
Sifted powdered sugar (optional)
INSTRUCTIONS
In a large mixing bowl beat eggs till thick and lemon colored. Add the granulated sugar and beat till smooth. Stir in the oil and vanilla. Thoroughly stir together flour, baking powder, salt, and baking soda. Add to egg mixture alternately with buttermilk. Turn out onto a lightly floured surface and roll to 1/2 inch thickness. Cut dough with floured doughnut cutter. Fry in deep hot fat 375 F.) till golden brown, about 3 minutes, turning once. Drain on paper toweling. Serve plain or sprinkled with powdered sugar. Makes 24.

According to an old story of the 1850’s an Indian tried to buy the wife of a pioneer because he liked the way she made doughnuts. Through a misunderstanding, the Indian was prepared to trade three Indian women for the young wife. As the legend goes, it took a council of war and a bushel of doughnuts to save the doughnut maker.
