Mocha Ice Cream with Coco Nibs

INGREDIENTS
2 cups heavy cream
1 cup milk
2 raw egg yolks
1/2 cup blue agave nectar
1 TBL cocoa nibs (optional)
2 TBL organic Cocoa mixed with water to make a syrup (can be heaping TBL for extra dark chocolate flavor)
1 teaspoon coffee extract
INSTRUCTIONS
Whisk together all the above ingredients, and chill for 20 minutes in your freezer. Then, add to Cuisinart or other ice cream maker and process for 20 minutes or until it becomes ice cream!

My husband's new favorite! We used pasture-raised eggs bought directly from a farm to insure safety from salmonella.
