Mock Chicken Almond Casserole

SERVINGS
8 to 10 servings scale / convert
INGREDIENTS
1/2 lb. sausage
1 lb. lean ground beef
1 env. dry chicken noodle soup mix
2 cups boiling water
1 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup uncooked regular rice
1/2 cup slivered or sliced almonds
INSTRUCTIONS
Preheat oven to 350°F. Brown meat in skillet on medium high heat. combine drained meat with remaining ingredients in a 2-1/2 quart casserole. Sprinkle almonds over top. Baked covered for 1 hour.
CHEF COMMENTS
I like this recipe - tastes somewhat like a Chinese-style chow mein. It is an inexpensive dish to make and take to pot-lucks.
