Gambetti Grigliati con Rosemarino -Grilled Rosemary Garlic Shrimp

INGREDIENTS

1/4 cup finely chopped garlic, mashed to a paste with 1 teaspoon coarse salt
Zest of one lemon
2 tablespoons minced fresh rosemary or any herb will work I like mint as well
3 tablespoons olive oil plus oil for brushing shrimp
Pinch or two of red chile flakes
1 lb. of jumbo shrimp U-20
lemon wedges as an accompaniment
salt

INSTRUCTIONS

In a large bowl stir together garlic, minced herb, lemon zest, and 3 tablespoons oil, red pepper flakes and add shrimp. Marinate shrimp, covered and chilled, for 30-60 minutes.

Season the shrimp with salt and add the shrimp to the grill. Grill the shrimp 3 to 4 minutes on each side, or until just cooked through. Remove to a plater, drizzle with olive oil, and serve a lemon on the side.

CHEF COMMENTS

this is a great way to cook shrimp if you’re stuffing in flounder, Sea bass/ Cod/ etc or sauté and add a splash of wine to the cooking pan and reduce for great shrimp scampi.
