INGREDIENTS
1 pound swordfish or any firm fish ex: monk fish, sable, tuna, cod, marlin, bluefish; cut into 1-inch-thick slices
Fresh lemon juice
Olive oil
Chopped fresh oregano
Salt and pepper
INSTRUCTIONS
Sprinkle fish with lemon juice, then with oil, oregano and pepper to taste. Let marinate for 30 minutes. Before grilling season with salt and grill on high for about 2 to 3 minutes per side, making sure the fish stays moist. Serve immediately. Traditionally, the fish is drizzled with oil and served with lemon slices on the side.
