Red Clam Sauce (Sugo Vogole Rosso)

INGREDIENTS

3 cloves garlic
2 anchovies
1 cup of chopped clams, drained
Pinch hot chili flakes
A few tablespoons of capers
1 cup dry white wine
1 cup of red sauce
1 bunch Italian parsley, finely chopped to yield 1/4 cup
Salt

INSTRUCTIONS

In a sauté pan, on a medium high heat, sauté the garlic, chili flakes, capers, and anchovies for 2 minutes. Add in the clams and the wine and reduce the liquid by 3/4th. Add in the tomato sauce and cook for another 5 minutes then remove from the heat and add in the parsley, check the seasoning for salt.

CHEF COMMENTS

This recipe moves really quick so its better to have as much prepped and sitting out at your disposal.
