Farmer's Wife's Sauce (Sugo alla Contadina)

INGREDIENTS

¼ lb of pancetta or slab bacon, ¼ inch cubed
2 cloves of garlic, sliced
½ onion diced or 1 leek sliced thin
1 ½ cup of peas
1 cup of white wine
2 cups of bechamela
½ cup of grated Grana Padana or ¼ cup of Pecorino

INSTRUCTIONS

In a sauté pan over a medium heat, brown the pancetta and drain off most of the fat except 1 tablespoon. Add in the garlic and onion and sauté till soft and translucent. Next add in the peas and wine and reduce the liquid by 3/4ths. Add the bechamela and simmer for about 5 minutes, add in the Grana Padana or Pecorino and serve over your favorite pasta or pork roast
