Belgian Christmas Almond Spice Bread

Servings: 5 dozen

INGREDIENTS

4 cups sifted flour
1 scant (slightly less than) teaspoon baking powder
1 teaspoon cinnamon
Pinch of salt
1 3/4 cups blanched almonds, grated
1 cup plus 2 tablespoons firmly packed light brown sugar
1/4 cup brandy
1/2 cup milk
3/4 cup unsalted butter, melted

INSTRUCTIONS

Sift flour with baking powder, cinnamon and salt. Stir in almonds and sugar. Combine brandy, milk and butter, and stir into flour mixture. Add more flour if necessary to give a dough that will pack together firmly. Press into a roll, wrap in waxed paper and chill overnight. Cut into 1/2-inch-thick slices.

Arrange on a lightly buttered cookie sheet. Bake in preheated 375 degrees F. oven for 10 minutes. Cool on a rack.
