Dutch Appelflappen

INGREDIENTS

Vegetable oil for deep frying
2 1/2 cups flour
A pinch cinnamon
A pinch nutmeg
1 1/4 cups sweet cider or flat beer
1/4 tsp. salt
6 tart apples, cored, peeled, each cut into 8 wedges
Icing sugar
Lemon quarters

INSTRUCTIONS

Preheat deep fryer to 325°F.

Mix flour, cinnamon and nutmeg. Combine with cider or beer and salt to make a smooth batter. Let batter sit for 15 minutes at room temperature.

Dip apple wedges in batter and fry, a few at a time, until light golden. Drain fritters on paper towels in a warm oven, sprinkle with sugar and remove to a warmed dish. Serve with lemon quarters. Serves 4.
