Dutch Buttermilk Pudding (Karnemelk Pudding)

INGREDIENTS

2 envelopes unflavored gelatin
1/2 cup cold water
2 cups sugar
1 cup fresh lemon juice, heated
2 1/2 cups buttermilk
1 cup heavy cream, whipped

INSTRUCTIONS

Soak gelatin in water. Let stand for 5 minutes. Place over low heat and stir until gelatin is dissolved.

Dissolve sugar in hot lemon juice. Add to buttermilk. Stir in dissolved gelatin. Blend well and pour mixture into a 1-quart mold. Chill until firm. Serve with whipped cream. Makes 8 servings.
