Brown Rice and Apricot Pilaf

INGREDIENTS

2 cups cooked Brown Rice
2 chopped scallions
2 chopped celery stalk
olive oil
6 chopped dried apricots

INSTRUCTIONS

Steam or cook brown rice for 45 minutes following package directions. Chop scallions and celery, saute in olive oil until tender. Add chopped apricots and scallion/celery mix to brown rice. Serve.

CHEF COMMENTS

Great use for leftover brown rice! Serve as an accompaniment to lean meat or fish. Perfect for South Beach dieters trying to eat more whole grains!
