Raw Apple Cake

INGREDIENTS

1 ½ cups veggie oil
2 cups sugar
3 eggs
3 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon salt
6 cups thick sliced peeled green apples (Granny Smith's work great!)
1 cup chopped walnuts

INSTRUCTIONS

Beat oil and sugar together. Add eggs and mix. sift dry ingredients and add to batter. Fold in nuts and apples. Pour mixture into greased and floured bundt pan. Bake at 350°F for 1 hour and 45 minutes until toothpick comes out clean.

This recipe is from an old family friend, Cathy Campbell. It's been a favorite for 25 years.
