Tim's Pork Carnitas

INGREDIENTS

3 pork steaks with bone removed and cut in half
6 cloves of garlic smashed
1/4 tsp fresh ground pepper
1 tbls ground cumin
2 1/2 cups of water or 1 beer
1 small can of chopped green chiles
a dash of ground red pepper or cayenne pepper
1 package of store bought fajita seasoning

INSTRUCTIONS

Toss all ingredients into a crock-pot on high for 4-6 hrs depending on
how big the steaks are. When done, take out steaks and set aside to cool just a bit so you can cut them into cubes. Pour carnitas brew into a sauce pan and reduce by 3/4, then make a batch of corn starch and water to thicken the carnitas sauce. Pour over carnitas cubes and toss under the broiler for 5-10 minutes or until you see a bit of carmelizing going on. Pull out and enjoy serve with tortillas, fresh tomatoes, onions and green peppers that have been grilled under the broiler.
