Ukrainian Lady Fingers or Wafer (Andruty) Mocha Torte

INGREDIENTS
FOR THE LADY FINGERS:
1/3 cup sifted CAKE or Pastry flour (NOT self-rising flour)
1/3 cup confectioners’ sugar (sometimes called icing sugar or powdered sugar)
1 whole egg
2 egg yolks
A few grains salt
1/4 teaspoon vanilla
2 egg whites
FOR THE FILLING:
1/3 cup butter
1 cup brown sugar
3 egg yolks
1/3 cup strong lukewarm coffee
1/4 teaspoon vanilla
3 to 4 Tablespoons blanched, slivered, toasted almonds
INSTRUCTIONS
FOR THE LADY FINGERS: Sift the flour 3 times. Sift the sugar separately. Beat together the whole egg, egg yolks, and salt until very light; stir in the vanilla. Beat the egg whites until stiff. Add the sugar gradually and beat until the mixture thickens. Fold in the egg yolk mixture and then fold in the flour very lightly.
Shape into 3 1/2 to 4 inch oblongs with a pastry tube on an ungreased paper placed on a baking sheet. If a pastry tube is not available, shape carefully into 1 x 3 1/2 to 4 inch oblongs by pouring the batter from the end of the spoon. Bake in a moderate oven 375 F. for 12 minutes. This recipe will make 24 to 39 lady fingers. Prepare the filling.
FOR THE FILLING: Cream the butter and sugar together until thoroughly blended. Beat in the egg yolks, one at a time. Add the coffee very slowly, beating constantly. The coffee should be lukewarm not cold, to prevent the separation of the liquid and fat. Mix in the vanilla and continue beating.
Arrange alternate layers of the lady fingers and filling in a small oblong or square pan, ending with a layer of the filling. Garnish with the almonds.
You may use the wafers alternating with wafers and filling ending with the filling.
Chill for at least 12 hours. Cut into slices and serve well chilled as a dessert.
CHEF COMMENTS
This Mocha Torte can be made with lady fingers or thin wafers commonly used for ice cream sandwiches. In Ukraine, these wafers (called “andruty”) are sold in plate sized squares or rounds. Many tempting refrigerator cakes or layered dainties are made with them. Some Canadian stores in the larger centres feature these wafers occasionally. A thinly sliced sponge cake may be used in place of the lady fingers or wafers. This is a very tasty filling.
