Zucchini au Gratin

SERVINGS

4 to 6 servings scale / convert

INGREDIENTS

4 tbsp. butter or margarine
4 cups thinly sliced zucchini or summer squash
1 sm. onion, thinly sliced
1 tsp. salt
1/8 tsp. pepper
2 sm. tomatoes, peeled and cut up
1/2 cup shredded sharp Cheddar cheese

INSTRUCTIONS

Melt butter in saucepan on low heat. Add rest of ingredients except cheese. Cover and cook on simmer until squash is tender, about 15 minutes, stirring occasionally. Add cheese and cover pan until cheese is melted. Serve without draining, as no liquid has been added.
