Halloween Carrot Fudge

INGREDIENTS

1-1/2 cups grated carrots
3-1/2 cups sugar
1/2 cup sweetened condensed milk
1/2 cup water
1/2 tsp. lemon flavoring

INSTRUCTIONS

Mix carrots, sugar, milk and water in saucepan; cook to soft ball stage. Remove from heat. Add lemon flavoring; mix well. Cool. Beat until creamy; pour into buttered pan and pat down. Cool; cut into squares. 6 servings.
