Tim's Holiday Pancakes

INGREDIENTS

1 1/4 Cups All-Purpose Flour
1 Egg
1 Cup Buttermilk
1/2 Tsp pumpkin pie spice
1 Tbls vanilla extract
1/4 Cup Granulated Sugar
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/4 Cup cooking oil

INSTRUCTIONS

Preheat a skillet over medium heat. Use a pan with a nonstick surface, or use nonstick spray. Better yet, use an electric griddle.

In a blender, or with a mixer, combine all if the remaining ingredients until smooth. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles. When the edges appear to bubble, flip the pancakes. they should be light brown. Cook on the other side for the same amount of time. They should be light brown.

Makes 8-10 pancakes. Serve with butter and your favorite maple syrup, or honey, or fresh strawberries and whipped cream or blueberries, etc.

sumpthin for the kids, derived from my moms recipes so not sure where the original came from but i have put a few extras in it to make it a bit better
