2 Tablespoons vegetable oil
1 medium onion,finley chopped
2 large garlic cloves, minced
1 12-once bottle chile sauce
3/4 cup beer
1/4 cup unsulfured (light) molasses
3 Tablespoons cider vinegar
3 Tablespoons bourbon whiskey
1 1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce

INSTRUCTIONS

Heat the oil in a heavy medium saucepan over medium heat. Add the onion and the garlic saute until tender, around 8 minutes, then reduce the heat. Add the chili sauce, molasses, beer, vinegar, whiskey and the Worcestershire sauce. Simmer until it has reduced to 2 cups, stirring occasionally, for about 25 minutes. Stir in the hot pepper sauce.

CHEF COMMENTS

This is a true all-American bbq sauce. I use it on ribs, pork chops, chicken and sometimes burgers. We just brush it on during the last 10 minutes of grilling. (Can be made 1 month ahead. Cover & chill.)
