Tim's Great Chocolate Chili

INGREDIENTS

2 lbs ground beef
2 jalapeno peppers, sliced or chopped
2 (28 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
4-8 garlic cloves smashed silly
2 cans of black beans
1/8 cup lime juice
1 bottle of beer (samuel adams preferred) NO CANS
1-2 ounce dark chocolate
COCOA CHILI SPICE MIX
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon thyme
1 teaspoon basil
2 teaspoons oregano
1package Williams chili seasoning
2 teaspoons garlic powder
1 teaspoon onion powder
2 teaspoons dried parsley
1 teaspoon dried cilantro
1/2 cup cocoa powder

INSTRUCTIONS

Assemble the spice mix into an airtight container ahead of time. Most of these ingredients are approximate. Inside a deep cast iron pot (about 7 qt.), on brown the meat on high heat to about medium doneness. Add the beer and cocoa chili spice mix, stir it in really good and let cook for 5 minutes.

Add the beans. Make a little space on the bottom of the pan. Add the tomato paste. Cook the paste for a minute, then mix everything in the pot together. Add the diced tomatoes and garlic. Keep stirring, keep a very slow boil or a simmer. Add the lime juice and the dark chocolate pieces. Let the heat from the chili melt the chocolate. Stir and set the heat to low. Partially cover and simmer for about 35-45 minutes, stirring occasionally.

CHEF COMMENTS

Enjoy with more Sam Adams beer and dont put any crackers in it, just ruins the taste.
