Sweet Plantain Casserole

INGREDIENTS
8 large very sweet plantains
4 pounds of ground beef
1 small onion diced
1 small green pepper diced
3 garlic cloves minced
2 tsp. of sofrito
1/4 cup of green olives cut in halves
8 oz. can of tomatoe sauce
adobo for seasoning
3 egg whites beaten
4 cups of mozzerella cheese
INSTRUCTIONS
1st Layer:
Cut sweet plantains long and thin. Fry them until lightly brown. Fill bottom of your casserole dish and brush with egg whites.
2nd Layer:
In frying pan, saute onion, green pepper, garlic, olives and in a small bit of oil until lightly brown. Add ground beef, sofrito and tomato sauce and fry until beef is browned. Lay a portion on top of the sweet plantains.
3rd Layer:
Add one cup of mozzerella cheese for every layer.
Repeat layers 2 more times and top it off with cheese. Put casserole in oven for 10 to 15 minutes on 350°F. Serves up to 8 people. Buen Provecho!
