Roasted Red Pepper Sauce

SERVINGS

2 cups scale / convert

INGREDIENTS

1 md. onion, chopped
1-1/2 tbsp. olive oil
2 cloves garlic, finely chopped
1/2 cup water
1-1/2 tbsp. tomato paste
1 to 1-1/2 cup roasted red peppers, chunks
2 tsp. freshly squeezed lime juice
2 tsp. parsley flakes
1 tsp. mild paprika
Salt and pepper

INSTRUCTIONS

Sautee onion in olive oil, over medium heat for 3-5 minutes. Add garlic and continue until onions are soft and translucent. Do not burn garlic.

Add water and stir in tomato paste. Add red peppers, lime juice, parsley, paprika. Simmer for 10 minutes. Season with salt and pepper as desired.

Blend until smooth, with hand-held blender.

CHEF COMMENTS

This is a self developed sauce for various meats - not developed to be a pasta sauce, but I imagine it could be.<br />
<br />
A sweet and sour version works well with pork.... just add 2 tablespoons of white vinegar, and 1 tablespoon of honey... you can adjust to taste.
