Hungarian Goulash

INGREDIENTS

2lb meat(stewing steak or mutton etc.),2 large onions.1 red pepper,2 green peppers,2 chillies(the best are the little round ones),1 large potato(use a maris piper or other floury potato)1 tin chopped tomatoes,2 tbl.spoons paprika(authentic hungarian is by far the best),salt,cooking oil(traditionally lard)

INSTRUCTIONS

Heat oil in saucepan and fry onions till soft. Add meat, peppers, chillies, salt and paprika. Fry until meat has browned. Grate the potato into frying mixture(this will make a nice, thick sauce). Add tomatoes and enough water to stew meat. Cover pan and simmer until meat is tender, adding water if it starts to go dry. Serve on a bed of rice or gnocchi (galuska) and put a spoonful of soured cream or yoghurt on top. Enjoy!!!!
