Pumpkin Pie Pancakes

INGREDIENTS

2 c. pancake, waffle or biscuit mix
2 T. brown sugar
1 T. cinnamon
1 - 12oz. can evaporated milk
1 c. pumpkin
3 T. vegetable oil
3 t. vanilla
2 eggs

INSTRUCTIONS

Mix first 3 ingredients in a medium bowl. Add the rest of the ingredients and beat until smooth. Pour small amounts into a a frying pan over medium heat and cook until edges are dry and some bubbles form. Turn and cook until other side browned.
