Mongolian Beef

Servings: 3 servings

INGREDIENTS

1 1/2 lbs sirlion or flank steak
2 packages of ramen noodles
oil for frying beef and stir frying
Marinade:
2 egg whites
1/4 tsp salt
2 tsps sesame oil
1 1/4 tbsp corn starch
Vegetables:
2 bunches of green onion cut into small peices
3 cloves minced garlic
2 or 3 heads of broccolli
A handfull or so of peapods
Sauce:
6 tbsp hoisin sauce
4 tbsp water
2 tbsp soy sauce
2 tsp cooking vinegar
2 tsp of sugar
1/4 tsp of chili powder

INSTRUCTIONS

Boil ramen noodles; drain (but don't use the little included seasoning packets), then set noodles aside. Slice beef into thin strips. Add the marinade ingredients in the order given. Marinate the beef for about an hour.

Prepare vegetables and set aside. Mix together the sauce ingredients and set aside. Once beef is done put about a cup of oil in a wok and heat to frying temp. Fry beef till done, then remove and drain on paper towels.

Remove oil and then put in about 3 tbsp. of oil back in the pan. Stir fry the garlic and onions. Add the broccoli and peapods; cook till tender but don't over cook. Then remove and briefly fry the noodles then return vegetables to the pan and cook briefly.

Make a well in the middle by pushing noodles and vegtables up to the sides. Add the sauce and bring to a boil, stiring to thicken. Then add the beef and stir everything together and simmer briefly. Serve hot.

CHEF COMMENTS

This is a pretty amazing dish. Relatively simple but very good. The marinade makes the beef very tender and the sesame oil adds a nice flavor. It is sort of a modified stir fry. Please enjoy, this is one of my favorite dishes.
