Maple-Cider Chicken

INGREDIENTS

4 tbsp. butter
1/2 cup real maple syrup
1 tsp. salt
1/8 tsp. ground cloves
1/4 tsp. dry mustard
1 tsp. black pepper
1 chicken, cut into serving pieces (about 2-1/2 lbs.)
3/4 cup corn flour (or cornmeal)
1/2 cup apple cider

INSTRUCTIONS

Preheat oven to 400°F. Put the butter in a 13x9x2-inch baking dish and put it in the oven to melt. When melted, whisk in the maple syrup, salt, cloves, dry mustard and pepper. Once combined, coat the chicken pieces with the mixture then roll the chicken in the corn flour to coat thoroughly. Shake off excess corn flour.

Arrange chicken, skin side up, in the baking dish. Pour apple cider around the chicken but not over it. Bake uncovered for 30 minutes, basting occasionally with pan juices. Turn pieces over and bake for another 15 to 20 minutes or so, or until chicken is done. Add more cider if liquid evaporates.

CHEF COMMENTS

This isn't usually my type of "thing", but we really loved this chicken dish. The original recipes calls for cornmeal, but I had some Bob's Red Mill corn flour, which is what I used.
