Tasty Tomato and Fruity Chicken Casserole

INGREDIENTS

8 boneless and skinless chicken thighs. (readily available in New Zealand)
35 gram packet dried onion soup mix
400 gram can tomatoes in juice
2 tsp sweet basil
2 tbsp white wine vinegar
1 cup mixed dried fruit such as raisins, apricots and prunes
1 cup sauvignon blanc or other dry wine
1/4 cup honey
1 cup apple juice concentrate or fruit juice will suffice as a substitute
1 tsp dried chicken stock
1/2 tsp salt
1 onion chopped
2 tbsp each of cornflour(cornstarch)and water mixed together then added after cooking casserole for 20 minutes.

INSTRUCTIONS

Place all ingredients (except cornflour and water) in large nonstick frypan or skillet and bring to boil then simmer for 20 minutes. Add cornflour and water mixture then continue simmering for 30-35 minutes until chicken is cooked and casserole has thickened and reduced slightly in volume. Serve with mashed potatoes or rice and favourite selection of greens and other vegetables.

CHEF COMMENTS

this chicken is actually two recipes combined initially as an experiment, but now as a really tasty casserole. i suppose you could say this comes from New Zealand, though indirectly. this might look like a lot of effort, but really it's just the long list of ingredients and is definitely worth it putting in the effort. if you would like it to have a bit more of a kick, just add some of your favourite chilli spice flavourings.
