INGREDIENTS

2 1/2 tablespoons hot or sweet paprika(that's up to you) I like the hot stuff myself.
1 tablespoon ground coriander
1 tablespoon ground cumin
3/4 teaspoon fresh ground black or white pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/4 teaspoon ground cayenne

INSTRUCTIONS

Mix all ingredients in a small bowl. Use as a rub. I put it on at least 2 hours before grilling and chill the meat. Then 1 hour before grilling pull it out of the fridge. And bring it up to room temperature.

CHEF COMMENTS

Try this rub on poultry, pork, beef or even on vegetables. Grill or roast it gives the food the middle eastern taste that is now one of the new fads out there.
