Wild Rice Stuffing

INGREDIENTS

2 lg apples chopped
1 Lb mushrooms chopped
2 Tablespoon oil
2 Teaspoon salt
2 1/2c water
2 acorn squash
1c wild rice
1/2c chopped celery
1/2c onion

INSTRUCTIONS

In 10-inch skillet brown onion in oil. Add celery and mushrooms; cook 5 minutes. Add wild rice and brown for 3 minutes. Slowly, add water and bring to boil, stirring occasionally. Add salt and reduced heat; simmer for 1 hour.

Remove from heat and mix in chopped apples. Stuff into acorn squash. Bake in pan with 1-inch water in bottom and covered with tin foil for 1 hour or until squash is tender.
