Tuna Potato Salad

INGREDIENTS
4 mid-size potatoes cooked, peeled and cubed
1 red bell pepper chopped
1 red onion chopped
1 can tuna in water, drained
Dressing:
3 tbls oil
3 tbls apple cider vinegar or white wine vinegar
2 tsp sugar
Crushed black pepper
2 tsp mustard
Herbs of your choice
INSTRUCTIONS
Mix all the salad ingredients together and set aside. Put all the dressing ingredients in small blastic container. Cover and shake well to mix. Adjust the taste. Combine salad and dressing and refrigerate at least 1 hour before serving.
