Moomie's Beautiful Burger Buns

INGREDIENTS

1 cup water
2 Tbs butter
1 large egg
3 1/4 cups unbleached flour
1/4 cup sugar
1 tsp salt
1 Tbs quick-rising yeast
1 tsp onion powder (optional)
1/2 tsp dried onion flakes (onion

INSTRUCTIONS

Combine all the ingredients and mix and knead them together, by hand or by mixer, until you have a soft, smooth dough. Place the dough in a lightly greased bowl, cover and let rise for 1 hour.

Divide the dough into 8 pieces and shape each piece into a flattened ball; place the buns on greased baking sheets, cover and let rise 30-40 minutes, until they're puffy. Preheat oven to 375°F. Bake the buns for 12-15 minutes, until they're golden brown; remove from oven and baking sheet and cool them on a rack.

Split and use for burgers or sandwiches. For burgers, butter the split sides and fry them, buttered side down, until they're golden brown and warmed through.

CHEF COMMENTS

This is the lightest, most delicious and one of the easiest doughs I've ever worked with. The credit goes to whoever Moomie is. As a novice baker, this recipe is wonderful and almost a guaranteed success. It also works well as a loaf.

I tried this recipe 3 times already. The consistency is just not right, The first (failed) attempt was my own fault, as I omitted the egg, but the dough consistency was right. The second time I followed the recipe exactly, and used warm water, and the "dough" turned out very gooey (did not form a dough at all). The third go, I used water in room temperature, and I still did not get a dough............WHAT HAS GONE WRONG???? July 21, 2007
