Thai Vinaigrette

INGREDIENTS

1 1/2 whole limes, juice & pulp
3 Tablespoons rice wine vinegar
1 1/2 Tablespoons fish sauce
1 1/2 teaspoons Tabasco sauce
1 1/2 teaspoons white sugar
3/4 cup peanut oil
1 1/2 Tablespoons cilantro, minced
3 cloves garlic, minced
4 whole scallions, thinly sliced

INSTRUCTIONS

Blend all ingredients in a bowl except the peanut oil. Drizzle about 3/4 cup peanut oil in while whisking in the bowl. Let stand for 1 hour before serving and whisk again before serving.

CHEF COMMENTS

We make this alot around my house. We love Thai food. And this has to be one of the best salad dressings that I have come up with.
