Hundred Dollar Cake

Servings:

INGREDIENTS

1 cup butter (room temperature)
2 1/2 cups sugar
5 eggs (separated at room temperature)
3 cups cake flour
5 tablespoons strong coffee
1 teaspoon baking soda
4 teaspoons cocoa
1 cup buttermilk
2 teaspoons vanilla
1/2 teaspoon salt

frosting
2 boxes confectioners' sugar
6 tablespoons strong coffee
2 sticks butter (softened)
2 teaspoons vanilla
4 teaspoons cocoa

INSTRUCTIONS

Cream butter and sugar. Add egg yolks one at a time. Sift dry ingredients together. Mix cocoa with buttermilk. Add dry ingredients and liquid to batter alternately. Add vanilla and fold in beaten egg whites that have been beaten until stiff but not dry. Bake in 3 layers for 40 minutes at 350°F.

Frosting:
Add all ingredients and beat until creamy. Spread on cake. If the frosting looks too thick add coffee, if too thin add more confectioners' sugar.
