Servings: 4 servings

INGREDIENTS

4 salmon fillets (6 ounces each)
1-2 tbsp. olive oil
salt pepper

---For the Sauce---
1/4 cup sour cream
1/4 cup mayonnaise
1 clove garlic, chopped
1 tbsp. prepared horseradish
1 tbsp. fresh lemon juice
1/2 tsp. Worcestershire sauce
1/2 tsp. dijon mustard
1/4 tsp. onion powder

INSTRUCTIONS

Place sauce ingredients in a food processor and puree until smooth. Brush fish lightly with olive oil, and season with salt and pepper. Grill salmon over hot coals, about 4 minutes per side, or until centers are cooked as you prefer. Serve sauce spooned over salmon.

CHEF COMMENTS

Cooking time will vary with thickness of fish. I like mine cooked medium (a little dark pink in the center) for best flavor. Fish will firm up as it gets done. Try to turn fish only once.
