Beef Vegetable Cabbage Soup

INGREDIENTS

1 large can of tomato juice
1 large can of water (plus 2 cups, for more broth)
1/2 onion, diced
2 carrots, cut up
4 potatoes, cut up
1 1/2 cups frozen corn
1 can of green beans
slightly less than 1/2 a head of cabbage, sliced thinly
1-1 1/2 pounds of beef chuck, cut into bite size pieces
8 beef bouillon cubes (I prefer Better Than Bouillon)
4 cloves of garlic
salt and pepper to taste

INSTRUCTIONS

In a large pot, add the juice and water. Then add the onion, garlic, carrots, potatoes and cabbage. Bring to a boil, then simmer for 35 minutes. Then add the corn, green beans, beef chuck and beef cubes. Simmer for another 40 minutes or so, until beef is tender. Season with salt and pepper.

This is my favorite beef cabbage soup. Recipe given to me by an old friend.
