Cranberry Rum Brie

INGREDIENTS

1T packed brown sugar
1/2t rum or orange extract
1/2c whole-berry cranberry sauce, or lingonberry preserves
1/8t freshly ground nutmeg
8oz wheel of brie, at room temp
2T chopped nuts (walnuts or pecans)

assorted crackers

INSTRUCTIONS

Preheat oven to 450°F. Peel off top rind of brie, leaving 1/4-inch edge (leaving sides/bottom of brie intact). Place brie in pie plate or shallow oven-proof dish. Combine sugar, extract, berries, and nutmeg; top brie with mixture, and sprinkle with chopped nuts. Bake 5-7 minutes or until cheese softens. Place brie on a serving plate; offer several appetizer knives so guests can scoop the melted brie onto crackers or toasted baugette slices.

CHEF COMMENTS

You can use lingonberry preserves instead of the cranberries - in fact, I prefer them.
