Bacon-Wrapped Jalapeno Poppers

INGREDIENTS

12 fresh jalapenos
4 ounces low-fat cream cheese or neufchatel
6 slices turkey bacon

INSTRUCTIONS

Slice jalapenos in half lengthwise and remove seeds and membrane. Fill cavity with softened neufchatel cheese. Cut slices of bacon in half and wrap around each cheese-filled pepper, securing with a toothpick. Place peppers on a baking sheet and bake at 400°F for 25 minutes or until bacon is cooked through and starting to crisp up. Serve hot.

CHEF COMMENTS

While not quite as exceptional as breaded versions, in my opinion, these are still excellent as a low carb appetizer. Besides, if you have trouble with the other type from its breading falling off, you will like these a LOT! Great served with melted red jalapeno jelly to dip these in. Of course, that's not low carb.

Not much flavor. Try doing them on the grill to give them some smoke taste. April 21, 2009
