INGREDIENTS
2 tablespoons chili powder; sub WILLIAMS CHILI SEASONINGS if you can
3 tablespoon cumin
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon dried chopped onion
2 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried basil
INSTRUCTIONS
Mix in a bowl, keep in an airtight container. Makes about 2/3 cup. ENJOY!
CHEF COMMENTS
This is my version of Emeril&#039;s essence. I don&#039;t use any salt in mine and it&#039;s also great on popcorn. Great for a dry rub or mix with olive oil for a paste. Oh yeah, have a beer handy for those wimps in the group, you know who they are. They&#039;re the ones that go to a Mexican restaurant and order a hamburger. <br />

This is a fantastic seasoning! I cut it down just enough to do 3 bone-in split chicken breasts, tossed them around with the Essence in a plastic zip bag then grilled them. Great aroma, too. I used ancho chili powder (my favorite) and a granulated dried onion powder. Delicious!
