Anna's Easy Artichoke Pasta

SERVINGS

INGREDIENTS

1 sm. onion
2 tbsp. olive oil
9 oz. artichoke hearts *
4 oz. ricotta cheese
1 lb. penne
salt, pepper

INSTRUCTIONS

Heat olive oil in a medium sauce pan. Add onion and cook until translucent. Next add artichoke hearts, salt and pepper to taste, cook over medium heat for about 15 minutes. Meanwhile, cook pasta al dente, then add to artichokes pan. Coat pasta with ricotta and serve.

* I use Birds Eye Deluxe Artichoke Hearts.
