INGREDIENTS

1 lb cubed (raw) pork liver
2 lbs diced pork tenderloin or shoulder
2 large potatoes, diced
1 sweet bell pepper, cut in strips
1 tsp freshly cracked black peppercorns
1 1/2 tsp rock salt (more if you like)
1 medium onion, sliced to 8 or so pcs.
1 1/2 cups tomato sauce
2 seeds (not the entire star!) of Star Anise or 2 pieces bay leaf
1 closed handful of raisins (optional)
1 cup water (more or less)
dash of MSG (optional)

INSTRUCTIONS

Throw in all ingredients except for the pork liver, bell pepper, and potatoes together in a pot. Simmer until the pork is cooked and leaning towards tender. Should take about 20 minutes. You may need to add water, just enough to keep the meat in liquid.

When the pork is tender, add the potatoes and the bell pepper. Wait till potatoes done, about 10 minutes. When the potatoes are done, add the pork liver and the raisins. Bring heat to high and cook for another ten. Salt to taste.

Serve with steaming hot rice and a small dish of patis (Filipino fish sauce). Thai fish/shrimp sauce will do as well.

CHEF COMMENTS

Menudo is everyday fare in Filipino homes. Its ingredients are readily acquired and even better, cheap. The dish is easily prepared and goes very well with steamed rice.
