Mama's Fried Rice

INGREDIENTS

3-4 cups steamed white long grain rice
1 large onion chopped finely
6 rashers or bacon chopped
1 green pepper chopped finely
1 carrot grated
half cup cooked peeled shrimp (optional)
2 eggs (made into omelet and chopped)
Kikoman soya sauce (brand important!)
1 tsp chicken flavoured stock powder

INSTRUCTIONS

Fry onion over medium heat until transparent. Add bacon and fry until cooked. Add green pepper, carrot and shrimp. Stir fry for approximately 5 minutes. Add cooked rice and mix thoroughly to distribute the vegetables into rice. Add chicken stock powder and soya sauce (maximum 50 ml.) until desired flavour achieved. Make omelette with eggs, chop roughly and place on top of rice to serve.

CHEF COMMENTS

This is my Asian mother's recipe. Every time I go to a barbeque I am asked to bring it along. Rice needs to be steamed, not boiled and preferably made several hours before hand to avoid stickiness.

Your Mama's rice was real good! I will make it again soon. I added the shrimp it was better then alot I have had. March 8, 2005
