Bowl of Red -- Chili Con Carne

INGREDIENTS

2 pounds ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 (15-ounce)can tomato sauce
2 cups beer
2 Tablespoons chili powder
1 1/2 Tablespoons ground cumin
1 teaspoon salt
1 teaspoon dried oregano,crushed
1 Tablespoon Einar's Habanero hot Sauce(found on this web-site)
2 Tablespoons Tabasco Green pepper sauce

INSTRUCTIONS

Cook the ground beef in a large pan over medium-high heat until brown, about 10 minutes. Break up the chunks. Pour off the fat. Add the onion and the garlic and cook for 5 minutes. Stir in the tomato sauce, beer, seasonings and both of the hot sauces. Bring to a boil; turn down heat to a simmer and cover for 1 hour, stirring occasionally. Add more beer if needed.

CHEF COMMENTS

I had Chili Night at the diner a few weeks ago. This was the best seller out of the seven chilis we served that night. I saved some and made chili dogs the next day... Boy they were good too!
