Chicken Fajita

Servings: 1 serving

INGREDIENTS

1 chicken breast
1 or 2 tbsp oil
1/2 onion, chopped
1/2 green pepper, chopped and seeded
1 packet fajita seasoning mixed with water
salt and pepper, to taste
1 tortilla
1/4 cup shredded cheese
2 tablespoons sour cream
1/2 avocado, sliced

Salsa:
1/2 onion, chopped
1 tomato, chopped and drained
3-4 tbsp chopped cilantro

INSTRUCTIONS

Place chicken breast in water and boil until chicken is fully cooked. Meanwhile, mix the chopped onion, tomato and cilantro in a small bowl and set aside. When chicken is finished, rinse with cold water. Once cool, shred or chop chicken into small pieces.

Heat oil in a skillet or frying pan. First add onions, then green pepper, then shredded chicken. Sprinkle with salt and pepper, to taste. After frying for a few minutes, pour fajita seasoning over the mixture. Cook until chicken is fully saturated, then set aside.

Cover tortilla with shredded cheese and heat in oven or non-oiled frying pan. Be careful not to burn. Spoon the chicken, green pepper and onion sauce over the fajita, then the fresh salsa. Cover with slices of avocado and top with sour cream. Fold.

CHEF COMMENTS

These amounts are just estimates. Use as much of each ingredient as you need. The fajita tastes much better with fresh salsa, so I recommend following the instructions above rather than buying it at a grocery store. Also, don't water the fajita seasoning down too much, lest the chicken ends up soupy instead of saucy.
