Quick Chow Mein

SERVINGS

INGREDIENTS

1 onion, peeled and chopped
1/4 head cabbage, finely sliced
2 stalks celery, finely sliced
1 tbsp. oil
1-1/8 lb. minced beef or chicken
1/4 cup short grain rice
2 tsp. prepared curry powder
1 pkg. chicken noodle soup mix
1 can (8 oz.) pineapple chunks, juice included
2 cups water
1/4 cup ready cooked shredded chicken (optional)
1 cup chopped green beans

INSTRUCTIONS

Heat oil in a skillet. Add onion and cabbage. Add meat and cook until browned, breaking the meat up as it cooks. Add rice, curry powder, soup mix, celery, pineapple chunks (with juice) and water. Add cabbage, beans and chicken, cook for another 5 minutes. Serve over fluffy rice.
