Madeira Polenta

INGREDIENTS

1 package prepared polenta (plain)
1 8oz. can of button mushrooms
1 8oz. quantity of any other type of mushrooms (shitaake and portobella are delicious)
1/4 c. olive oil
1/2 c. madiera wine
2 T. margarine or butter
2 cloves garlic, minced
1/4 c. fresh parsley, chopped
1/4 c. fresh thyme, chopped

INSTRUCTIONS

Over medium-high heat, add the olive oil to a medium sized skillet. Once warm, add the garlic, thyme, and parsely until softened. Add the polenta to the skillet along with the butter; saute for about 5 minutes, until the polenta starts to crumble slightly. Finally, add the mushrooms and Madiera wine and saute for another 3-5 minutes until heated thoroughly.

CHEF COMMENTS

I modified a recipe I found in a magazine to concoct this one. It's really delicious and one of those recipes where measuring is not required... just a little of this and a little of that.
