Strawberry-Vanilla Mini Pies

INGREDIENTS

Crust

1 9oz box of jiffy pie crust mix
5 tablespoons water

Filling

1 4.6oz package vanilla jell-o pudding mix
1 o.3oz package sugar free strawberry jello mix
1 15oz can Queens Pride tropical fruit salad (optional)
2 cups milk

INSTRUCTIONS

Mix both Jell-O packages, milk and fruit salad juice in a medium sauce pan; bring mixture to a boil and cook until it thickens. Refrigerate to chill for about 20 minutes.

Meanwhile, grease a 12-cup muffin pan. mix the crust mix and water together; form into 12 evenly sized balls. Roll each into a mini pie crust and place in the muffin pan. Fill each crust 3/4 full with filling.

Bake at 325°F for 15 to 25 minutes or until the crust is golden brown. Sprinkle the fruit salad on top. Chill until cool. Sprinkle powdered sugar on top before serving.

CHEF COMMENTS

We made it up on an inspiration of just cooking. It is delicious because it is a sweet and tangy dessert.
