Salmon and White Cheese Fondue

INGREDIENTS

1 stick butter or margarine
3 tablespoons flour
1 cup milk or cream
8 oz swiss cheese (shreeded)
8 oz monteray jack cheese (shredded)
4 oz smoked salmon (cut in pieces)

INSTRUCTIONS

Melt butter in heavy saucepan. Stir in flour until well blended. Gradually stir in milk (or cream) and cook on medium until hot. Add 1/4 of cheese at a time, stirring frequently and allowing cheese to melt thoroughly before adding more. Once all cheese is melted, add salmon and continue cooking until creamy. Once mixture is creamy, place in fondue pot to keep warm. If need be, fondue can be kept warm on low until ready to serve.

This is excellent with the Vegan Breadsticks recipe found on this site. My family will eat it like crazy!
